Based on the comments in the threads here on the topic, I think the 'core skills' that would be needed would be Carousing, Steward, Liaison, Streetwise, and probably at least 0-level Admin and Legal, especially for the self-employed. I'd not be surprised if those working at the ... easily abused ... levels of the profession would also pick up Brawling or Blade (dagger or knife) or some other minimally-armed or unarmed "combat" skill.
